We will explain to you step by step how to prepare this delicious galette des rois based on Italian spread , a delicate combination of chocolate and hazelnuts.

INGREDIENTS :
FOR 1 CAKE FOR 6 PEOPLE
🍫 Ingredients for the Gianduja recipe inspired by that of Lili Bakery :
- 200 g whole hazelnuts
- 2 tablespoons of rapeseed oil
- 100 g of milk chocolate
- 95 g of icing sugar
- We added praline and it was perfect. 👌🏼
🍥 Ingredients for the cake:
- 3 puff pastries
🍦 Pastry cream:
- 100 g of sugar
- 5 egg yolks
- 1/2 liter of milk
- 50 g cornstarch
- 50 g soft unsalted butter
🌰 Almond cream:
- 100g sugar
- 250g almond/hazelnut powder
- 3 eggs
- 200g soft butter
PREPARATION OF THE HAZELNUT CAKE / GIANDUJA:

- First of all, make the homemade Nutella (Gianduja) from Lili Bakery, you can find the recipe on her blog right here: Homemade Nutella
- Prepare the pastry cream: bring the milk to the boil. Meanwhile, beat the eggs with the sugar until the mixture turns white, then add the cornstarch. Pour in the boiling milk in a thin stream, stirring constantly. Place the mixture over low heat and stir until boiling. Then leave to cool, covered, while you prepare the almond cream.
- Prepare the almond cream: crush the soft butter, almond powder and sugar using a fork until you obtain a homogeneous mixture.
- Mix the pastry cream and almond cream and divide everything into two equal parts. Incorporate the homemade Nutella into one of the two mixtures. Spread the first mixture (without the Gianduja) on the dough. Don’t forget the bean 😉.
- Close the pancake with the 2nd dough, moisten the edges to stick them well.
- Place the second device (with the Gianduja) and close with the 3rd puff pastry.
- Place a glass in the middle of the pancake and cut small slices all around. Twist the ends of dough.
- Bake at 170°C (thermostat 6) for around 40 minutes.
